Smoked Salmon, Dill, Lemon and Spinach Pasta with Yoghurt

This is what you’ll need to feed about 3 people
Cook up the pasta in salted water, add in the fresh corn for the last 5mins. drain and drizzle a little olive oil to prevent sticking.
Fry off some spring onions, add in the pasta with corn, turn the heat down.
Add in the pasta with the corn, add in about 1 to 1 and a half cups of yoghurt, add in the spinach and chopped dill and zest of 1/2 a lemon.
When the spinach has wilted, it’s ready to add in the smoked salmon. Turn the heat off, shred the smoked salmon into strips, add to the pot, there is no need to cook it, toss through with the juice of a lemon and serve with some fresh dill.
