Roasted Cauliflower with Lemon and Herb Cottage Cheese

Mix lemon zest and juice of 2 lemons into the cottage cheese, add some chopped parsley some salt and pepper. add a pinch of cumin or caraway seeds.

Chop up the cauliflower into big pieces.

Arrange into a baking dish and pour over the mixed cottage cheese and roast int the oven at about 45mins. When browned and roasted remove from the oven, it’ll keep cooking and there will be water at the bottom left from the cottage cheese. When it’s cooled, drain the water out.

Serve with lemon, fresh parsley and yoghurt, salt and pepper.
