Roast Butternut Squash, Grilled Halloumi, Roasted Walnuts, Rocket with a Seeded Herb and Yoghurt Dressing

Roasted some even sized, big pieces of butternut squash in an oven at about 200-220 for about 45mins, when nearly cooked and well browned add about 1 cup of walnuts to a baking dish and oven roast them for about 15-20mins or until brown. Remove from the oven when cooked, et them cool and add on top of washed rocket, grill some thick slices of halloumi and add on top and sprinkle some mixed roasted seeds. For the yoghurt dressing, use about 1/2 a tub of fat free greek yoghurt, add the zest of 1 lemon and the juice, chop up a handful of herbs (anything works really, I like thyme and parsley), sometimes a pinch of caraway seeds too) This lasts in the fridge for a while and can be used with lots of other dishes too like grilled chicken or roasted vegetables, or used as a dip.
