Mint, Spring Greens & Smoked Salmon Pasta

Courgettes, mushrooms, any pasta you like, spring onions, asparagus, mint, peas, garlic and flaked salmon

Start by cooking your pasta. While that is cooking, stir fry the onions, courgettes, mushrooms in some oil, then add a couple of crushed garlic cloves before adding about 1 pint of water

Bring to the boil, add salt and pepper and the asparagus stalks but keep all the spears for later. Add in about a cup of peas and all of your mint.

Once cooked, take 1/2 the mixture and add to a separate jug for blending.

Blend into a think sauce and add back to the saucepan

Add in your asparagus spears

Bring back to a high heat and then turn off

Add your salmon and grate in some parmesan cheese. Add in your cooked, drained pasta

Serve up…
