Date, Cocoa and Coconut balls

These are super easy. You need a packet of fresh/dried dates. Fresh is better but it’s expensive. Cocoa power, desiccated coconut and nuts (I’m using almonds, but hazel nuts or pistachios work well too – nuts are optional)

Soak 2 cups of dates in hot water for 10mins and then drain. Blend the dates with 1/4 of cocoa powder, 1 cup of desiccated coconut. You may need to add more dry ingredients to get to the right texture for rolling into balls. Crush a handful of nuts and add to the mixture.

Use a bench or tray to add the desiccated coconut for rolling.

Wet your hands and start making smallish balls with the mixture and rolling in the desiccated coconut

Done. They last for about 7-10 days, you can keep them in or out of the fridge. You can also add grated orange rind to 1/2 the mixture for a different flavour.
