Smoked Bacon, Spinach and Pea Quiche

Ok, so this recipe uses my Spinach Sauce. You need to make this in advance. See the site on how to make it. It’ll take 10 minutes or less. Heat your oven to 170. You’ll need 6 eggs, some nice tomatoes, some grated cheese, smokey bacon, frozen peas (mine has corn, but that’s fine too). If you’re vegetarian, omit the bacon for any preferred substitute, cubed tofu works well too.

Start with your eggs.

Whip them up, add some salt and pepper.

Add in about 4 tablespoons of the Spinach Sauce and stir well so the eggs are mixed in well.

Add in about 1 cup or so of frozen peas and mix well.

Add in a handful grated cheese.

Oil up a cooking dish

Layer with bacon, cut off some of the fat, but not all, as some is nice to have as flavour.

Pour in your egg, cheese and spinach mix.

Drop in your tomatoes

Layer the top with remaining bacon

Sprinkle on some paprika if you like.

Cook in the oven at 170 / 180 for about 1 hours. There is a lot of water in there so cooking for a longer time at a lower heat is advisable.

Once cooked, serve up with a salad, and dig in. It’d a lovelt strong smokey taste with the pesto styled green eggs and juicy tomatoes.
