Toast Toppers

I have a load of things I like to throw on some dark, crunchy, hot buttered toast at anytime of the day.

I’ll keep adding to this page and tag the recipes as I make them. This one is great too.

Start with a hot pan and add the chorizo so the oils are extracted into the pan, then add in the mushrooms, tomatoes, spring onions and toss. I swap the Chorizo for tofu and a spray of garlic oil for the vegan option.
add in some torn basil leave, pepper and salt, chilli if you like that stuff 🙂
Throw in a bag of baby spinach leaves
Squirt on some balsamic glaze and cook until wilted.
All done. Serve as it is, or on top of toast. Possibly add a poached egg on top too.
