Frittata / Quiche

I make this a lot as it’s fast and easy and I can take it to work for lunch. There is another way to do this too, using loads of peas and eggs mixed together with some basil in a 1 inch deep dish. Its looks great too. But I like this as it’s a bit more hearty for a good lunch meal.

Put the oven on to 200. Add 6 eggs to a mixing bowl. Add in your chopped spring onions, carrots, smoked bacon, diced courgettes. Sometimes I add in cheery tomatoes or spinach. As they both have a lot of water, don’t add too much. With the frozen spinach, defrost it in the microwave, then extract all the water out by hand. Just grab a hand full and squeeze it until most water is out. Mix it all up together so the egg coats everything, add in about 1 – 1 1/2 cups of grated cheese and mix.
Use a spray oil in your cooking dish. Pour in all the egg mixture. Here I add more spinach or top with some tomatoes and the rest of the cheese.
Put in the oven at about 200/180 and just wait until its cooked through. Usually about 30 – 40 minutes depending on how deep your dish is. Less if its not too deep. Serve with salad.
